Our Ayrshire Cows

The milk that we use to make Four Brothers Cheese comes from our family-owned herd of Ayrshire cows, which live around half a mile from our cheese room. Our aunt Catriona has been in charge of the 200-strong herd for the last 40 years and names each of the cows herself. They live outside on a grass-based diet for most of the year, moving to spacious cowsheds for the cold winter months. The Ayrshire breed, originating in the eponymous county of south-west Scotland, is well-suited to cheesemaking as the milk is of a high quality, with a rich and distinctive flavour.
